Construction / Maintenance Goals 2008
· Create a PM program for our ovens that is done on a quarterly basis to keep them in good condition and to catch problems before it causes a break down. Also set up a bi-monthly PM on the steam generators in the deck ovens to extend the life of the Generators.
· Create a theoretical food cost program. This is a program that would take the prices of all of the items on our end of month inventory and use our builds of menu item sales to come up with the food cost that the store could have run. This will help managers to pinpoint realistically what they should be hitting and help to identify problems.
· Rollout the breakfast sandwich program successfully to all of the stores in the franchise.
· Make at least one presentation per quarter at all GM or AM meetings. Also, be in charge of a meeting at least twice in 2008.
· Visit stores more often – this is something that I have always said I need to do but too often I get stuck behind my desk. I need to make it a focus to get out and visit our locations on a quarterly basis.
· Work with district managers and store managers to analyze budgets in order to make sure our budgets are realistic and accurate. Continue to do P & L analysis on a monthly basis within 1 week after the P & L has gone out.
· Work with chain restaurant solutions to cut down on the amount of paper and the time it takes for a bill to get from the service company to our accounting office. Also, work with CRS to eliminate return visits from our R & M contractors.
· Sell all of the items that we have in storage from crispani and reorganize the storage area.
· Identify the next café that needs to be updated and come up with a plan of action on the updating process. Also, have two new stores built and open by the end of 2008.
